Smokey Chicken and Chard Soup

12 oz Swiss Chard (1 small bunch)

2 tsp vegetable oil

1 large onion, chopped (1.5 Cups)

2 medium carrots (1 Cup)

3 garlic cloves, minced

2 to 4 tsp minced seeded chipotle chiles in adobo sauce (can be found in the Hispanic section of the supermarket. Remove veins and seeds for less heat)

1 tsp dried oregano

6 Cups lower sodium chicken broth

1 lb boneless chicken breast halves

½ C long grain brown rice or quinoa

2 avocados, cubed

lime wedges

Remove stems from chard, slice into 3/8 inch pieces. Coarsely chop leaves (about 6 slightly packed cups)

Heat oil in large pot over medium heat until hot. Cook chard stems, onion and carrots 5 – 7 minutes or until softened, stirring frequently. Add garlic, chiles and oregano; cook and stir 20-30 seconds or until fragrant. Add broth, chicken and rice, bring to a boil.

Turn chicken; reduce heat to low. Cover and simmer 20-25 minutes or until chicken is no longer pink in center and rice is tender. Remove chicken, cool slightly

Add chard leaves to pot. Increase heat to medium; cook, uncovered 3-4 minutes or just until chard is tender.

Meanwhile, shred chicken into bite size pieces; return to soup. Garnish each serving with avocado and lime wedges.

1. Make sure to add a protein and carbohydrate at every meal. ie:

*Lean Chicken Breast with Broccoli

*Salmon with Spinach

Snack Ideas:

*Apple & nut butter

*Almonds and some fruit

2. Cut out all sugars and anything white. ie:

*Incorporate more brown rice or brown rice pastas or bread such as Ezekeiel Bread, which you should be able to find at most health foods stores.

3. Make sure you have a combination of both strength training and intervals into your fitness routine.

*These do not need to be a long hour of workouts. Any of the Boot Camp workouts are 45 minutes or less. My clients did a 25 minute fat blasting workout in the pouring down rain and felt exhausted after that short of time. Why spend hours in the gym when you can get the same results in 30 minutes or less!

4. Find some form of support system.

*Having people around you who are supportive will help keep you motivated and working even harder. Join our Boot Camp group to get the support you need!

5. Make it FUN!

*Exercise does not have to be boring! There are lots of ways to make it enjoyable! We workout at a local Park. We get to enjoy the different scenery and we have to be creative to figure out what exercises we could do! Plus being outside always is much more enjoyable than being inside. How fun is it on the treadmill?

Trials of Antioxidant Supplements for Primary and Secondary Prevention: Systematic Review and Meta-analysis by Goran Bjelakovic in the February 28, 2007 issue of the Journal of the American Medical Association reported, “We did not find convincing evidence that antioxidant supplements have beneficial effects on mortality. Even more, beta carotene, vitamin A, and vitamin E seem to increase the risk of death. Further randomized trials are needed to establish the effects of vitamin C and selenium.”

A total of 226,606 people in 68 trials were examined. All supplements were administered orally. Beta carotene, vitamin A and vitamin E singly or in combinations increased mortality. The meta-analysis indicated that the synthetic form of Vitamin A increased death risk by 16%, beta carotene by 7% and Vitamin E by 4%. Vitamin C singly or in combination did not increase mortality. It is likely cancer and cardiovascular death were the reason for an increase in all-cause mortality. Selenium used singly or in combination with other supplements seemed to be of benefit and reduced all-cause mortality. Ten to 20% of the adult populations of North America and Europe (80-160 million people) consume antioxidant supplements.
The researchers’ gave an explanation for these negative findings: “Although oxidative stress has a hypothesized role in the pathogenesis of many chronic diseases, it may be the consequence of pathological conditions. By eliminating free radicals from our organism, we interfere with some essential defensive mechanisms like apoptosis, phagocytosis, and detoxification. Antioxidant supplements are synthetic and not subjected to the same rigorous toxicity studies as other pharmaceutical agents.”

They also emphasized this important point: “Because we examined only the influence of synthetic antioxidants, our findings should not be translated to potential effects of fruits and vegetables.”

Comment: Nutrients, such as vitamins and minerals, are present in natural packages (grains, legumes, vegetables, and fruits) that have developed through 400 million years of evolution (and/or by Divine Creation). Obviously they are perfect and interact with our bodies in a beneficial manner—all of the individual nutrients interacting within our cells to insure that we remain healthy. When a single concentrated nutrient is ingested in isolation, chemical imbalances are created within the cells—the end result, as this and many other studies have shown, is an increased risk of disease and earlier death.

This kind of publicity should be devastating for supplement manufacturers—if the public would only listen. Unfortunately, most people are looking for the easy way out—rather than give up their bacon and eggs for breakfast they put their hopes for salvation in vitamin pills. Supplements create multibillion dollar businesses—at best their concoctions are medicines (with side effects) and at worst, they are toxins causing sickness and premature death.

High-Fructose Corn Syrup: Not off the Hook Yet

High-fructose corn syrup (HFCS) — once considered the “Frankenfood” fueling America’s obesity epidemic — recently earned a presidential-style pardon. The American Medical Association concluded last June that this much-maligned sweetener is no worse than sugar. Recently, in the American Journal of Clinical Nutrition, a group of noted nutrition experts who’ve studied this processed sweet stuff agreed. Even if you don’t read medical journals or follow the headlines, you’ve probably seen those pro-HFCS commercials — paid for by the Corn Refiners Association — that feature smiling moms reassuring one another that HFCS is perfectly safe and natural. Natural? So is cyanide. Not that HFCS is the equivalent of cyanide. But we don’t think HFCS has a clean bill of health. Even if it were the same as sugar, who says sugar is a great item to add to food? Further, almost all of the reports that found HFCS to be the same as sugar were funded by groups that profit from selling HFCS, including soda makers. And we believe that the studies don’t answer everything. The most important question remains: Do big doses of fructose trigger obesity in ways that go beyond all those excess calories? Yes, we said fructose. We don’t mean the quantities found in fresh fruit, which come packaged with fiber and lots of nutrients. We’re talking about the nutritionally empty megadoses added to soda, commercial sweets, and baked goods. And we’re also talking about all the little hits you’re getting from foods that don’t even seem sweet, such as ketchup and salad dressing. A growing stack of research suggests that getting too much fructose in your diet interferes with leptin — an important digestive-system hormone that tells your brain you are full and should stop eating. In a new University of Florida lab study, animals that ate a high-fat, high-calorie diet that was also high-fructose became leptin-resistant and gained more weight than animals that ate a similar diet, minus the fructose. Truth is, HFCS isn’t the only source of excess fructose in the American diet. Table sugar has roughly equal amounts of fructose and glucose. HFCS comes under such fire because the food industry has been pumping more and more of it into foods since the 1970s. Why? It’s cheap, it mixes easily into beverages, and it enhances flavor and shelf life. The result: We eat 1,000 times more HFCS now than when Nixon was president — an average of 63 pounds a year! Plus, we’re eating and drinking more sweets than ever before. As a result, 10% to 12% of our daily calories now come from added fructose, according to researchers from Emory University. Obesity isn’t the only hazard, of course. Other research suggests HFCS and sugar raise diabetes risk. The bottom line: Getting the obvious, and not so obvious, sweeteners out of your diet will save you hundreds of calories a day — and remove a substance that could be flipping metabolic switches without your permission. Here’s how to do it: Say no to soda and other “liquid candy.” The calories alone are enough reason to stop: A single 18-ounce soda, sweet iced tea, or fruit drink can pack 200 or more calories — courtesy of the 15 teaspoons of sugar-like sweetener, usually HFCS, these beverages contain. Researchers at Children’s Hospital Boston found that teenagers who stopped drinking sugary beverages lost a pound a week without making any other changes in their diets. If you’re breaking a serious soda habit, transitioning to an artificially sweetened, zero-calorie version is a good stepping stone on your way to healthier drinks — as in water, unsweetened tea, black coffee, or skim milk. Rein in that sweet tooth. Candy and commercial baked goods — including cookies, pies, and cakes — account for 30% of the fructose in the American diet (and the booming sales of supersized hospital gowns). Read labels to find hidden HFCS. Check for HFCS (as well as other sweeteners you don’t need, like rice syrup) on the ingredients lists of all the processed foods you buy. You’ll find it in many breads, sweetened yogurts, and condiments. Buy only the brands without ‘em — or that don’t have them in the first five ingredients. Once you start label watching, you’ll see that HFCS is everywhere. Except, we hope, in your kitchen.

Hippocrates Health Institute Just a few facts about alcohol consumption. Many fine folks with and without Irish roots seem to view St. Patricks Day as a perfect excuse to abuse their bodies with a socially acceptable poison called “alcohol”. Hopefully none of our readers fall into this category, but possibly you could use some of the following information to help someone else make an informed choice about this potentially fatal drug. Make no mistake about the fact that alcohol is , in fact, a drug and has probably caused more problems in the social, mental and medical lifes of more people than all other drugs combined. The alcohol debate is a sensitive topic for many. Some people claim that drinking a few alcoholic beverages a day might be beneficial to one’s health, possibly even reducing the risks of coronary heart disease. Others claim that consuming moderate amounts of alcohol might help lower cholesterol and increase longevity. Many people try to justify their habit of alcohol by drinking organic beers and wines, believing that consuming unprocessed alcoholic beverages and unfiltered beer decreases the negative health effects. The deluge of targeted research on the benefits of alcohol is unconscionable and should not be taken seriously by any thinking person. Alcohol is a poisonous substance and the most lethal drug consumed today. More money is spent every year promoting the use of alcohol than on any other product on the market. The alcohol industry generates more than $65 billion annually and spends more than $1 billion on advertising. Advertising campaigns target our children, hoping to gain product loyalty by turning these children into future annuities. Alcohol use is so widespread that it is seen as a suitable drink with which to celebrate any occasion. Many find it difficult to communicate without partial to total intoxication. The goal of alcohol advertising is to portray alcohol as hip, youthful, fun, sporty, harmless and necessary. This industry is not concerned about health; it wants lifelong addicts who will constantly contribute to its revenues. Generations of definitive research condemning alcohol are now met with bogus studies released for public knowledge. The high percentage of the population who drink on a regular basis prefers to accept industry-created data, while there are 100 truthful studies against alcohol for every one concocted by the industry’s paid puppets. Ask any addiction specialist if alcohol is less harmful than such hard drugs as cocaine, heroin, methamphetamine, etc. In fact, those doctors held in the highest regard consider alcohol the most psychoactive drug on earth. Competent researchers can cite a plethora of studies showing that the interaction of alcohol with the body completely correlates with the predictable outcome of psychological addiction. Unchecked, the majority of alcohol consumers can easily slip into alcoholism, the most common self-inflicted disease suffered today. Good scientists consider alcohol to be a septic poison that weakens every cell and organ in the anatomy. It is absorbed directly through the walls of the intestine without digestion and travels through the bloodstream, where it extracts water from the cells, dehydrating the body. Of course this weakens the cells, usually killing them. This process causes severe damage to vital organs, including the liver and brain. The liver cleans the blood thousands of times each day. When that blood is saturated with deadly alcohol, the liver converts that alcohol into sugar. When metabolizing excess quantities of alcohol, the liver begins to swell and may become filled with fat. Eventually, the liver begins to weaken, and fatty liver degeneration begins, developing scar tissue on the liver, which leads to cirrhosis. Even small amounts of alcohol consumption begin to threaten the liver’s integrity. At this point, blood is no longer capable of passing through the liver properly. Cirrhosis is characterized by the hardening of the liver because of the unnatural development of connective tissue leading to further decline of healthy and active liver cells. After repeat consumption of alcohol, the liver’s enzyme production is inhibited. This impedes the absorption of fats, proteins, and most vitamins (vitamins A, B, D, E and K). After this devastation, the body struggles to effectively burn stored fat. Alcohol’s caloric content is 70 calories per ounce and it silences the body’s natural craving for food and generally renders the habitual consumer malnourished. Additionally, alcohol causes blood sugar levels to drop, creating fatigue and causing energy levels to diminish. This deadly drug also acts as a cocarcinogen that enhances the carcinogenic effects of other chemicals by promoting tumor formation. The liver is a remarkable organ capable of regenerating itself after being severely damaged. But because alcohol is one of the toxins that the liver cannot process very well, the liver is unable to repair itself after such damage. Once the liver is damaged, other organs of the body suffer, especially the brain. The amount of oxygen supplied to the brain is reduced, directly damaging the brain cells. Common manifestations of such damage are amnesia, disorientation, hallucinations, emotional disturbances and, in severe cases, seizures and neurological disorders. Short-term effects of alcohol consumption include difficulty walking, blurred vision, slurred speech, slowed reactions times and impaired memory. The list of negative health effects of alcohol is very extensive compared to the few so-called positive effects of alcohol, which can be achieved by other nutritional methods. For example, the topic of drinking red wine has many believing that the antioxidant effects of the resveratrol and flavanoids found in the grape skins and seeds prevent blood clotting and plaque formation in the arteries. Wouldn’t it seem better for your health to consume the actual skins and seeds to get the benefits from these antioxidants instead of risking your health by consuming red wine? Another concern about consuming wine is the addition of sulfites to the wines to prevent oxidation and spoilage. These sulfites may induce allergic reactions in some people, causing breathing problems, hives, heartburn and headaches. Many people try to justify the use of drinking wine by claiming that the wines they are consuming are organic, stating that no sulfites have been added. This claim leads people to believe that they are not causing any harm to their health by consuming these legal drugs. These consumers may not realize that organic wines are allowed to contain a small percentage of sulfites without having to state it on the bottle. There are actual reports stating that the wine industry developed a marketing campaign to boost the perception of wine as a health food. This campaign is misleading the public about drinking, according to a report issued by the Center for Science in the Public Interest (CSPI). “Disguised as objective information based on recent research,” said CSPI Alcohol Policies Project Director George Hacker, “the Institute’s propaganda spreads the deceptive and potentially dangerous message that moderate drinking – especially moderate wine consumption – is an important factor in maintaining all-around good health for the general public.” This report states that the Wine Institute manipulates research to highlight reasons to drink but fails to report the evidence of the damaging effects of alcohol consumption. “There is no health magic in wine,” said Sheila B. Blume, M.D., addiction psychiatrist and former New York State Commissioner on Alcoholism. “I would never recommend that anyone begin drinking, because alcohol has many destructive health effects.” There is no greater deterrent to human sanity, family structure and productivity than the use of alcohol. Growing up, I experienced firsthand the destructive results of alcohol on my family. After many of years of habitual drinking, my parents’ marriage began to crumble, and neither one could take the emotional and verbal abuse that invaded their lives after abusing this drug. After 18 years of marriage they divorced, and my sisters and I became part of a broken family. As the youngest, I watched my two older sisters follow the same vicious cycle, justifying their behavior but knowing in their hearts the damage it was causing to their physical and emotional health. Many drinkers will use slogans like, “I only drink socially” or “I only consume beer or wine,” without realizing that alcohol is alcohol and in any form it has a social and personal negative impact. As an example, each bottle of beer contains approximately the same alcohol content as a shot of whiskey. Most wines, volume to volume, have higher amounts of alcohol than beer. Then there are those who go directly to the hard stuff and claim to drink only one small shot a day. Ask the billions of alcoholics who consume only small amounts, but need it daily, if the amount makes any difference in their dependency. Don’t be fooled by ad campaigns that direct you to participate in what should be an illicit practice. The direct, negative effects from the consumption of alcohol outweigh any perceived positive benefits they can state. Most of the so-called benefits of alcohol are easily achieved by adapting a lifestyle of pure foods, exercise and positive attitude. It is the negative mind with low self-esteem that is fertile ground for cultivating the disease of alcoholism. Staying active and well-nourished is a significant retardant against the degenerative act of drug consumption. Written by Andrea Nison and Sam Sheppard
